whats for dinner?

I see this topic on a lot of foody websites, why not this one? Simple, just put a post up telling us what you had/are having for lunch and/or dinner. I’m excited to get dinner ideas from other people!

Lunch: Salad with acv, braggs, and a bit of olive oil (been reading about high fat diets and trying to reduce mine!) and a sprinkle of sunflower seeds, several clementines, and a pink lady apple (those are SO frickin’ flavorful)

Dinner: not a clue – this is the one I struggle with finding ideas for for a family (don’t want another salad at that point), rest of the family doesn’t eat nearly as much raw as me… which is why i started this thread – to get ideas from everyone else!

  • I’m having leftover pumpkin curry over softened eggplant. I need to buy a lime on the way home because it’s really good with lime and I’m all out. I posted the pumpkin curry recipe last night. It’s really good, quick to make, and you could make it low fat if you wanted.

I also have buckwheat sprouting so I’m planning to make the ‘curry chews’ before I go to bed so they’ll be ready tomorrow.

I’m feeling a little under the weather today, so I’ll be having the water of two young coconuts, and maybe some green juice a few hours after that.
But for lunch today I had a delicious raw pizza I bought at the market on the weekend=)

I had left over cauliflower curry for breakfast.Which was amazing.

Then for dinner I had sea spaghetti with pesto – very heavy on the basil! and some celery and cucumber juice, and a couple of custard apples.

I’ve been dipping flax crackers in spicy walnut taco meat, macadamia sour creme, pico de gallo, and guacamole all mixed together in a bowl. High fat, I know, but I’m craving this for some reason. Lots of nights, though, I have a fruit smoothie and a plain bowl of mixed greens with tomatoes for dinner. Another night-tiem favorite is sushi made with some combinations of avo, cucumber, carrots, sprouts, jalapeno, onion, sun-dried tomatoes, olives and chopped greens.

  • I am looking to make Caraway Marinated Kale and Lentils…I may have to wait till tomorrow since my lentils are not soaked. I did have the tuna sandwhich for lunch today with an orange on the side. This is the second time making it and it lasts for a week in my house. Yumm. Last night I made the fajitas and those were so good.

A big chopped red cabbage and cilantro salad with some flax-teriyaki sauce (orange, flax seeds, nama shoyu, fresh ginger and onion blended together).

But that’s for my little sister. I just put it in the fridge for her when she gets home from school. I’ll be on a Chinatown bus to NYC fasting as I always do when I travel.
