What's the Deal with Rice and Beans?

OK—so canned beans are not raw right, what about dried beans? Are they raw? And rice, what’s the deal with rice, are they all raw too, or not so much? When I soak rice and beans do I need to soak them in the fridge, or can i leave them on the counter top?

Oi! So many questions!

    I do know that rices, including wild rice, are not raw, they are steamed and impossible to obtain raw. Somebody else will have to answer you about beans. :)

    If rice isn’t raw why do I keep seeing recipies for wild rice in “The Complete book of Raw Food” ? this is very frustrating…blerg Someone needs to write the difintive guid on raw with what is and what isn’t raw… :(

    yes, there are recipes for wild rice all over, even on this site, and people comment that wild rice is not raw. I love it, but it’s not raw.

    Not to long ago it was thought that wild rice was raw. So the idea continues.Beans are raw unless they have been stored to long. You do not need to put the beans in the fridg to soak unless it is very hot in your home. Sprout your beans on the counter. After they have sprouts refrigerate them. They will still grow but very slow.I have always used wide mouth canning jars for sprouting. Put in the seeds, beans etc. let soak, put screen over the mouth of jar, turn over in sink. Let sprout.One jar. One cleaning. That is it.

    Brown rice is raw. Unless the container states it is a “quick” brown rice, that is. You can even sprout brown rice.

    I know it’s frustrating to find out that some raw gurus who wrote books didn’t bother to do their homework, but this is a great place to learn about what constitutes “raw” and how to find out.

    Remember that things like frozen vegetables are never raw, as veggies are blanched in hot water before freezing. Also, “raw” in the nut industry only means that the nuts have not been toasted. In fact, many types of nuts are subjected to hot steam before being shelled or heated during processing. Same for seeds, so don’t rely on any stores, raw or not, to be honest. Call processors yourself to find out.

    OK—so I can find raw brown rice, frozen vegetables are never raw…waht about frozen or canned fruit? Raw or not?

    And about the beans—so I by any kind of bean dry, throw it in a glass jar with water and when it “sprouts” there ready to be used? So for example I could by dry pinto beans “sprout” them then process them to make raw refried beans?

    One other consideration, PESTICIDES It is my understanding that pesticides are use heavily on the rice paddies…

    Canned anything is NOT raw… Frozen fruit is raw…

    Try to sprout whatever bean you like, if it grows a tail then is is raw, as far as I know…

    capture, throw all your ideas about eating out. even vegetarian eating. the bulk of your diet on raw will be fruits and veggies, with seeds and nuts to complement. fresh everything is best, but some frozen fruit has not been blanched before being frozen, check the company.

    To sprouting beans. You will soak the seeds in a wide mouth canning jar. Wide mouth because all the commercial screens a person can buy are for wide mouth jars.I have heard of people using part of a nylon stocking.Hum So soak over night pour out water and rinse. turn the glass over so no water is left in jar. Keep the jar turned over and the beans if fresh will sprout. I buy my beans at the health food store. Also, black eye peas are good as sprouts. Tastes a bit like green peas. There is also a French lentil, much smaller then lentils, they are good, too.

    I use to freeze corn with out the hot water treatment. They will last for 3-4 months with out deterioration. Good to have on hand for corn tortillas.I like the thought of blending up, then making corn leather in dehydrator. When needed just blend again or soak what you need.

    On the website I run with my husband we have a list of what is not raw because we were so frustrated when we first went raw and slowly realised that most raw recipe books aren’t really that raw at all!

    Thanks everyone! I really appreciate your help. I am still very exited about my raw adventure, but it is starting to feel a little daunting and overwhelming…but now that I think about it, when I first went vegan it was hard too. Seems like nothing was vegan, but now that i’ve had so much time with it, vegan is super easy…I hope once I aclimate to raw that it too will be easy (or at least easier!)

    I’m in the process now of finding out which beans, lentils, ect. my local Whole Foods sells raw/bulk and I’m planning on taking a trip down to the farmers market and food co-op on Saturday—I’m sure they will be able to help me a lot and show me specific things I can eat :)
