What the heck is Irish moss?

    I’ve never used it myself… it’s supposed to make things thicker or more gelatinous. I use agar instead; it’s easier to find.

    Well, agar is $60+ per pound.

    You only need a little bit of Irish moss or agar flakes at a time. I’m not sure how long Irish moss keeps.

    Lecithin or chia seeds could be another substitute. Cheaper.

    I just used Irish moss today to make a super thick raw mayo! I was so happy how thick it made my mayo and it doesn’t really have any taste so it didn’t change the taste of my mayo. I just love it. I bought the Irish Moss flakes for $7 for 6 oz from David Wolfes site. I have seen cheaper elsewhere though. Next time I’ll buy in bulk.

    You don’t need a lot of it to thicken things – a little goes a long way. I think it is little healthier to use since it is a sea vegetable.

    Everyone has used or eaten it before and probably didnt know it. It is normally seen under the name carrageenan. It is used in all sorts of foods and things like shampoos and conditioners to thicken. It is also used to make beer.

    The only places I can think of to buy it would either to be to check your asian stores or check a store that sells beer or wine making supplies. My bf made his own wild grape wine once and got some Irish Moss at the wine making supply store.
