what about a smoothie made using young coconut? I like coconut, meat and water with a little vanilla and sometimes a dash of cinnamon. There is a recipe on this site called cocogurt also.
Grapefruits? Cherries? They’re very low glycemic. When I was cutting sugar, (and switching to raw at the same time) my breakfast was half a grapefruit, segmented, half an avocado, sliced, and some hemp seeds, mushed together like a salad. These days I have a very green juice for breakfast- celery, chard, parsley, and green apple- but if that’s too much sugar you can try cucumber and lemon instead, to cut the harshness of the green.
Here are a few recipes from Rainbow Green Live Food Cuisine:
1) Granola: 1c almonds, soaked; 1c coconut pulp; 1T mesquite meal; 1T pumpkin pie spice; salt.
Process ingredients until chunky, dehydrate 3 hrs at 145 degrees, then 2-3 hrs at 115 degrees. Serve w/fresh nut/seed mylk.
2) Coco Mac Porridge: 2/3 c coconut pulp, 1 oz mac nuts (unsoaked), 1/4 vanilla bean, 1/2 t mesquite meal, salt, 3 oz water. You can add 1T cacao powder if you like.
Blend and serve.
Variation: strawberries, cardamom, pumpkin pie spice.
You can use yacon syrup for sweetness. It’s a prebiotic, which will nourish the probiotics to fight candida. I think stevia might be acceptable as well, since it doesn’t have any carb content.
3) Savory Spicy Pecan Loaf: 1.5 oz pecans, .5 oz flax, about 2t lemon juice (more or less), 1 T water, 1/2 T olive oil, 1/8 t salt, 1t cumin, 1/8 t hing or garlic powder, 1/8t oregano, 1/8t thyme, 1/8t turmeric, pinch marjoram, pinch sage.
Add some cayenne and black pepper if you like.
Process all ingredients. Form into loaf and serve.
