I love wasabi. This is the brand I use http://www.clearspring.co.uk/japanese/sushi/wasabi and they claim it is freeze dried then ground. Does anyone else still use wasabi? How do the raw credentials sound?
I would almost bet my life that it's not raw.... it's mixed with "dried" things which are definitely dried over 110 degrees. In the food industry, food is dried at 300 degrees or more often.
