I had read somewhere that you should keep nuts in the freezer because they can go rancid. Well mine now taste horrible. ya know like freezer burn. I did scrap a couple of Brazil nuts off and then they tasted normal. Should I throw them out or is there anything I can do to make them ok?? Help nuts are so expensive
I use wide-mouth Mason jars and vacuum seal anything that will be in the freezer for more than a week or so. Freezer burn is the result of air being trapped between the food and the “container” in which it is placed. Vacuum sealing removes the air. Try to use jars that are pretty close to the volume of food you are freezing. Another contributing factor is moisture. Veggies and fruit should be as dry as possible before freezing.
EDIT: My family has been freezing a year’s worth of nuts (specifically pecans) for years, with no problems.
Blue_Eyes—you said you scraped the Brazil nut and then it tasted ok. I don’t know how you plan to use the nuts, but you might try just rinsing them off. It sounds like the moisture is just collecting on the outside, and the inside is still good. (Hope that makes sense.) Occasionally I let fresh frozen fruit stay in the freezer too long without vacuum sealing and it accumulates some “frost.” I rinse it off under cold water and then it seems fine for putting in smoothies, etc.
