    In nature, seeds are dormant until the temperature and condtitions are suitable to being the growing process. When you soak them in water you are creating the condtions yourself. Soaking is a process in which by soaking seeds in water you are releasing the enzyme inhibtors which are natural compounds in grains and legumes that when dry prevent the germation process from occuring. So soaking and sprouting grains, seeds, nuts and legumes inactivates the compounds which stimulates sprouting.

    During the sprouting process the macro-nutrients are broken down into their simplest forms. The nutrients in the food multiplies and increases vitamin B and C levels. They are also higher in protein.
