A recipe challenge!

Does anyone have a recipe to “rawify” the Indian dish Aloo Gobi? I am not very good with recipes and have been looking/thinking/obsessing!! about this one for a while now. Any suggestions really appreciated! (Dehydrator friendly is OK)

  • OMG we’re exactly the same! I always loved to go to Indian restaurants and pig out on oily rice and aloo gobi, the potatoes and cauliflower mixture is amazing!! I’d like to find a raw version of this too! :)

    ok. this isn’t aloo gobi, but it might give you a starting point for experimentation. i’m more of a saag person, so i started making this recipe adapted from “eat smart, eat raw”

    a few handfuls of spinach or chard
    2 TBs of sesame seeds (more depending on how creamy you like it…)
    1 tsp of chili flakes (or powder)
    1 TB garam masala powder
    a little water to blend

    i put it all in the magic bullet (adding the spinach in stages as it blends). the flavor is VERY indian and ends up kind of like a curry to pour over fresh peas, pulsed cauliflower, jicama, green beans… the options of limitless.

  • I was thinking a marinade using all the flavors: green chilis, onions, lemon juice, ginger, garlic, turmeric, garam masala, cumin, coriander, (sometimes coconut). But what would you use for the base of the marinade? Like water or coconut water or oil? Then could I throw the mixture into the dehydrator for a while to get a cooked-ish texture?

    Mmmm, I want that recipe. We love aloo gobi!

    Try pine nuts as a base… got the idea from the cauliflower curry recipe which btw, is yummy!

  • Cool! Good idea! I’ll have to try that cauliflower curry recipe too! Maybe it would be best to just do some experimenting in the kitchen…
