They say Rhubarb is toxic on some raw food vegan sites I have went to. But I saw a science article in an online library that said only certain kinds or parts of rhubarb are toxic. I don’t remember. I didn’t pay too much attention because I don’t eat it. This websites just say don’t eat rhubarb, it is a good site to get recipes and find other articles too. I also read it in RAwsome by Bridgette Mars.
I will list as much article I can find about the subject. I don’t have the time to review them so I don’t know if any will state what or which part of rhubarbs are ok. I hope you can get your information.

Thanks for the links…All of these appear to confirm what I have heard in the past, which is that the leaves are poisonous to ingest, but the stalk is not.
As for eating the stalk raw, I’ve seen folks who like to dip rhubarb in salt and eat, but that just doesn’t sound good, as I’m not a huge salt fan. Has anyone figured out a raw version of rhubarb crisp or a rhubarb bread of some sort? Sounds like it may be time to start experimenting!
i cut off the leaves and pull the strings off and me and the grandsons sit and eat it raw. it is very good.they love the sour taste of it.that is how we eat it.good luck
My kids eat the stalks all the time. I would go to pick some for a pie (before going raw) and would find that they had raided my plant and I wouldn’t be able to find enough to use.
Hey Kandace I just read that rhubarb is suppose to detoxify the liver.
