purple potatoes?

Does anyone know anything about peruvian purple potatoes? Can one eat them raw, and if not, does anyone know if they make a good fabric dye?

  • Hi chicory! Here in Peru they are eaten the same as normal potatoes, so if you eat white potatoes raw, these should be no different… I read on another post about soaking them in lemon juice first to get rid of the starch. Sometimes the have a pale creamy-lilac color inside, so this would probably give the material a very soft lilac color when using to dye. A better option for a strong purple is using purple corn (also peruvian). It is an excellent cotton dye!

  • I love juicing my potatoes… must mix them with other things though as they are very strong on their own. If you juice them, make sure you stir all the stuff at the bottom! There is so much potassium in the area around the peel, wonderful food.

    i just got some of these, and they are the prettiest purple color ever! It brings me back to those wild hair color days :) of course, this dye would be much much safer

    Chicory~ I don’t eat potatoes or haven’t for 4 or more years, but while shopping I saw those purple potatoes and wondered… If I sliced them thin on the mandolin then why couldn’t I dehydrate them, spray them with flax oil and sprinkle them with sea salt… Yes I bought them and did it… Sinful!!! But they were too starchy so I would recommend soaking them first… I did not peel them but I did enjoy my raw potato chips They were even crunchy!!! Yum!!!

    I would use purple cabbage or pokeberries for a purple veg dye… Might be cheaper… Beets are great for red….

    the potatoes were really cheap… got them at a new international market that just opened here. Why is it that at int. markets, the “exotic” fruits and veggies are reasonable, but should the same stuff be sold at the regular grocery it is 4 times the price? the chips are a great idea :) I might have to try that

    I was referring to cheaper than purple corn… LOL Pokeberries would be the cheapest of all… I have many growing near my driveway… When the birds poop them, a purple stain is left where ever it lands… My car, my porch, my hair… LOL

    I am going to google international markets in my area to see if any exist… GREAT IDEA!!!

  • I’ve read that raw potatoes can be toxic, as they are a deadly nightshade. Worth looking into.

    BTW Chicory~ Pokeberries are toxic, do NOT ingest, so if you use them as a dye be sure to wear a mask and gloves… But then you would have anyway, right??? LOL

  • I’d heard the same thing as Bubbaw. Can you eat raw potatoes? Like the white and gold kind? I thought they were poisonous.

  • I was just coming here to post a question about raw potatoes. We received a little bag of organic potatoes, the small white and it looks like a small russet one from my CSA. I had thought that it wasn’t a good idea to eat raw potatoes, but I wasn’t sure what to do with these. I have a feeling we’ll be getting potatoes for a while this Fall from the CSA each week.

    If I bake them into fries for my daughter, it will be nearly impossible for me to not eat them too, as fried potatoes have been my weakness. yummy.

    I guess I’ll go do some research to find out for sure.

  • When I was young, my dad would eat raw sliced white or yellow potatoes with a little salt on them. He grew up on a farm so I guess that’d be where he started eating them that way?

  • I did the same thing when I was a kid! My mom would always let my sister and I have a few pieces of raw potato with salt as she was making french fries. I actually liked them better that way even then. But she always said I couldn’t eat too many cuz I’d get worms. I don’t know if she was serious, or just didn’t want me to eat them all before they got cooked.

  • I did some internet research last night, I know it isn’t the most reliable, but it is a start. From what I read, potatoes, tomatoes, and peppers are all part of the Nightshade family. They are safe to eat, but the green ones should be avoided. They say that the green contains increased concentrations of toxins, and shouldn’t be eaten raw nor cooked. Apparently, green peppers are just unripe, and should be avoided. I hadn’t known!

    So, I’m going to try soaking 1 cut up potato and see if I can make a yummy raw dish from it.
