Please Help - Preserving Lychee

Hi everyone

Right now the lychee's are ripening here in the northern hills of Thailand, and I live under millions of sweet tangy fruits.

So many that I can try and preserve half of that million for the rest of the year-

But how? In a tropical climate, where the rainy season brings fungus and the dry season brings steaming heat.

Any suggestions.

Bear in mind ingredients normally used in f.ex US are not readily available here.s

The price of Lychee is so low and many people cant even find buyers, I am really hoping I can find an easy way for simple kitchens to preserve lychee so I can help the villagers make money of their crop. Its really sad this- they are of the Akha tribe and quite poor.

    Corecries - were you able to find a way to preserve the lychees? I did some research when you first posted this question, but came up with very little . . . just recipes on the Lycheesonline website, which seem prohibitive in your setting.
