I noticed I eat a significant amount of celery(both root&leafs), spinach&salt dried black olived, all high in sodium, should I monitor\be concerned about this issue? I don't eat salt of any kind though.
I would say it is pretty impossible to get too much sodium eating whole unseasoned unaltered fresh plant foods. I believe that plant foods are designed to give us perfect amounts of nutrients. Now, if you are taking supplements or eating sodium chloride as in table salt, then yes you could be consuming too much.
