I just got a new ice cream maker, and I'd really love to try out those gorgeus raw ice cream recipes. The only problem is that there's no way I can get young thai coconuts from where I live..
So my question is: is it possible to make ice cream using the meat from older coconuts?
The short answer is yes you can but the texture is not as smooth and you need some good kitchen equipment. You need to grate the coconut first and soak it in the coconut water for an hour to soften further. Process the grated meat (without the water), with the rest of the ingredients. To be honest I find that I can make just as good ice cream with very well soaked cashew nuts and some coconut butter. Try and experiment to see what works for you!
