i julienne it and toss it with olive oil, celtic sea salt and pepper. let it marinate for a little bit. yum.
when i ate cooked food, i would julienne, blanch and then bake it topped with vegan Parmesan (crushed almonds, nutritional yeast flakes and miso) i bet it would be tasty if you topped raw marinated kohlrabi with raw vegan parm. raw gratin :)
