Frozen

Hey! I am just wondering about frozen foods. Dose freezing foods, have the same effect on them as cooking them does, because you are still exposing them to extreme temperatures. Does that not alter the food? I love to eat peas, and they are almost impossible to find fresh, so I eat the frozen ones. If I know they are not blanched, are they o.k? Same with frozen fruit. Lots of books say that frozen foods retain their nutrients, but I was wondering what everyone else thinks.

From a raw perspective, freezing is fine. Most of my favorite raw desserts are frozen, such as the delicious coconut fudge bars. I’ve had a hard time figuring out which companies do not blanch their frozen fruits/vegetables first, though. I’ve heard that Cascadian Farms doesn’t blanch their vegetables. Do you know of others?

  • while frozen is not optimal, it’s certainly a great alternative to cooked. Nutrients are maintained moreso than when heated. I buy in bulk when foods are on sale in season and freeze for smoothies later on. I think eating frozen peas is fine, I’d just try to stick with fresh as much as possible.
