Dehydrator dilemma..spiralizers and plastic

I have been raw for 4 years, without a dehydrator (though I have borrowed one from time to time) and without a spiralizer (just have used a peeler). I am also a chef, so my desire to create all of the yummy deydrator recipes is great. But I have such a dilemma...one is the amount of electricity that is used...and I wonder if it is truly sustainable to be a raw vegan in the winter in Central PA. Also, there was another post just yesterday that I can't find now about the plastic issues of dehydrators. AARGH!! I looked at the stainless steel ones and this is a viable option for me, yet the sheets are plastic. So frustrating. I suppose I could use unbleached parchment paper, but that ultimately needs to be thrown away (and we all know there is no 'away') Also was wanting to find a stainless spiralizer. Does anyone have one? Thanks and peace to all
