Cooked nuts in cheese?

Hello,
I am living in Spain and there is little access to raw nuts/seeds. I want to make some cashew cheese but I can only find cashews that are roasted. The same goes for macadamias and brazil nuts. Has anyone tried using "cooked" nuts in place of the raw ones? I am planning on buying some anyway and trying it out, but I just wondered if anyone else had ever tried this. I did manage to find some raw pumpkin seeds, but thats the only type so far!

You shouldnt have a problem yielding good results. Clearly, if you have to buy roasted, try to avoid salted as to produce a better flavor. Sometimes you have to work with what you are given :)
