Coconut meat from normal coconut
I have a regular old coconut I cracked open this morning for it's water. I now have the remaining coconut, and I don't know what to do with its meat! All the recipes I've ever seen calling for coconut want meat from a young thai coconut.
What should I use the rest of my coconut for?
just eat it raw thats how i like it best.
I want to do something special with it! I also don't enjoy eating it plain.
It doesn't taste like a whole lot, so I imagine you could shred it and throw in some spices to use as a "rice"? It would probably marinate well and could be used in sweet or savory dishes. Maybe shred it and use it as a filler for brownies with a little cacao and dates? It's great shredded as a pie crust with a little lemon or orange zest, cashews, dates, and sea salt. Filling of your choice (fresh fruit...yum). There are options...

water (as
needed)
stevia (or sugar, or agave. really what you want)
dates (optional)
Blend meat with water until it becomes smooth (to a pudding-like consistency) and add sweetener of choice. Chill in the fridge until it's cold.
I like to add berries,
and it's like a DELISH parfait or something. you could also use coconut water instead of regular water, if you have any. maybe even a juice!
