I have a few lying around and I'm trying to figure out what to do with them. I've seen gourmet recipes involving marinating and dehydrating them and all that, which doesn't appeal to me much, I prefer just chopping, combining and eating. Is there much I can do with just the straight unprocessed fruit?
I love it marinated and dehydrated until it's very crisp. However, I have sliced it and sweated out the bitter juices by salting it and letting it sit, then wiping off all of the excess salt. Then I've made baba ganoush (spelling?) by pureeing with tahini, lemon juice, olive oil, salt, cumin and a pinch of cayenne. You can peel it or not.
