are raw pistachios really Raw

Hi everyone! Since other nuts like raw cashews at a grocery store are not really raw, does any one know about pistachios?

I’ve wondered about that too for all nuts. I seem to be having a lot of trouble finding raw nuts in general, especially raw pine nuts.
